Easy Nutty Granola
Our daughter came home for the holidays and in the mood for some artisan granolas… Hmm, I think I could try that recipe! So here we go…
Easy Nutty Granola
Breaky, lunchy, snacky, healthy, tasty, & so easy to make
Ingredients
- 1/2 cup canola or olive oil
- 1/2 cup honey
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 2.5 cup rolled oat
- 1 cup pecan pieces or combination of any nuts and/or seeds
- 1/2 cup coconut flakes (optional)
- 1.5 cup dry cranberry and/or cherry
Instructions
- Mix oil, honey, cinnamon, nutmeg & salk
- In bowl, mix above mixture with oat, nuts/seeds, coconut flakes if using
- Spread out on cooking tray
- Bake in preheated oven at 350ºF for about 30min, mix halfway and turn tray around to make sure an even bake
- Check for brownness to your liking, pull out then add dry cranberry/cherry
- Add honey for sweetness if needed; if you do so, put the tray back in oven to bake another 10 mins or so
- Store in closed container after cool down; this should keep well for a week or two
- Served with milk or yogurt & berries, or just by itself!
Notes
you could pretty much add any ingredients that suit your taste buds: more variety of nuts, more coconut flakes… how’s about some chocolate chips??
